SHIROIYA the RESTAURAUT will host a one-night-only collaboration dinner on Wednesday, June 24, 2026, together with FAN × DALCUORE of Takasaki, to celebrate both restaurants being featured in the globally acclaimed French restaurant guide Gault & Millau for five consecutive years.
The chefs of both restaurants, each dedicated to showcasing the finest ingredients from Gunma, will create an exclusive one-night-only menu featuring signature dishes and specially curated courses, offering guests a memorable culinary experience that will linger long after the evening ends.

FAN × DALCUORE has earned acclaim for its one-of-a-kind fusion cuisine, blending the distinct culinary expressions of Chinese chef Hiroaki Hoshino and Italian chef Nobutomo Suzuki. Following the passing of Chef Suzuki, Chef Yukari Tomioka has carried on his vision, continuing to deliver exceptional cuisine together with sommelier Miki Hoshino.
For this special evening, guests will enjoy the restaurant’s signature dish, the “Deconstructed and Reconstructed Caprese,” alongside venison prepared from deer personally hunted by Chef Hoshino. The menu will also feature a selection of dishes in which Chef Hiro Katayama of SHIROIYA the RESTAURANT elevates carefully selected local ingredients into innovative French-inspired “Joshu Cuisine,” all complemented by thoughtfully curated drink pairings.
